Viral Green Goddess Salad

Ingredients

1/2 head of green cabbage
- 3 medium/large cucumbers
- 1 bundle of green onions
Dressing:
- 1 cup spinach
- 1 cup fresh basil
- 2 garlic cloves
- 1-2 small shallots
- 3 lemons juiced
- 1/3 cup olive oil
- 1/4 cup cashews (or other nut!)
- 1/3 cup Parmesan cheese
- 1 tbsp rice vinegar
- 1 tsp salt
- Your choice of tortilla chips (for serving)
Recipe
- Chop cabbage, cucumbers, and onions, and place into serving bowl.
- Throw all ingredients for dressing into blender and blend until smooth.
- Pour dressing over serving bowl with chopped veggies.
- Use tortilla chips to serve!
